Well, it all depends, really. The factories would continue to use old stocks of earlier insignia until they ran out, so it is possible that older insignia might appear on later pattern tunics. Other German Helmets
There was also a variant of the M1916 intended for Turkish usage. The peak on the front of the helmet was removed as the Turks' faith forbade them to shade their eyes. Apparently none were delivered but saw service in 1919 with the Frikorps - they are visible in contemporary photos.

I agree that the LW cap is a West German one, if you look under the sweatband you should find foam rubber padding. Also, the peak is most likely plastic. Without actually seeing the tunic in question I can't say for definite but from your description it sounds like a West German Luftwaffe one. These are charcoal grey in colour and possibly a wool/rayon mix (the moths don't seem to like them). The collar is the open style seen on LW or DAK tunics and ...
